Zephyr Bee is a small family-owned apiary with a reputation for the quality and great taste of its honey.
Our 100% “farmers honey”, is sourced from our own apiary in Pefferlaw, Ontario and select local apiaries north of the GTA. Because we use raw, unpasteurized honey, all of the beneficial nutrients are left intact. To ensure our honey meets the high standards our customers expect, all loose particles such as wax and pollen are removed with a fine sieve.
What is Honey?
Honey is a delightful food you can enjoy everyday. Its flavor and color vary depending on the locality of the flowers bees collect nectar from.
Honey has properties very different from just about any other liquid. Depending on the temperature around honey, it either flows fast (warm) or slow (cool). Genuine honey will never separate as it pours in a continuous stream. Unpasteurized honey crystallizes and hardens faster than pasteurized honey, and the most unique characteristic of honey is that it never goes bad. Honey is full of nutritional enzymes and has a very low water content (unlike just about every other food), allowing it to stay fresh for years.
Left untouched, honey will begin to crystallize after a month or two, and all natural honey will eventually turn solid. This natural process occurs quicker when the jar is left undisturbed for a period of time and in cooler temperatures. At room temperature, all natural honey will eventually crystallize. The rate of crystallization slows at temperatures below 30 Celsius.

FAQ
My Honey has started to harden throughout thejar, especially on the bottom, is sugaradded to it?
No. All natural honey will eventually harden and crystallize. This is a natural process of Honey, please refer to the /pages/honey for more information.
Is this honey pasteurized or unpasteurized?
Zephyr Bee Honey is unpasteurized and contains as many enzymes and nutrients as possible
What does pasteurization in honey mean?
It means that it has been heated to reach a much higher temperature (71°) than it has ever been to ensure that it doesn’t easily crystallize over a longer period of time. By doing this the health benefits of honey are reduced.
Does Zephyr Bee have its own apiary and produce it’s own honey?
Yes, we have hives located in Pefferlaw & Holland Landing, Ontario but also source from other apiaries throughout Southern/ Central Ontario to fill the demand. We strive to provide the best honey that our Province produces.
Is the honey that Zephyr Bee offers organic?
No. Most honey produced is not organic. For it to be organic, the hives have to be placed deep within a natural setting. This should be at least a 5KM radius of untouched land in all directions for the bees to forage on wild flowers.
What kind of honey does Zephyr Bee offer?
Currently we offer Wildflower & Creamed Honey, but intend to bring in Blueberry, buckwheat and Honeycomb in near future.
What is wildflower honey?
This is Honey that bees forage on from wild flowers or any other sources of nectar that the bees may find. Plant species such as goldenrod, black-eyed Susan or purplecone flower along with so many others.
I have allergies to pollen, is unpasteurized honey good for me?
Honey contains traces of pollen and is natural occurring in the product. Though it probably won’t affect your allergies? If you are concerned consult your doctor about the benefits of Unpasteurized Honey.
Is the honey jar free of contaminates?
The honey that we produce and source is simply raw honey. Though we filter it with a fine sieve there can be particles of wax, pollen and other organic matter that was from within the hive.
What’s the lead time on an order once placed?
1-7 Days (depending on schedule and stock), though we’ll strive to get it to you as soon as possible

Mainly the central part of the GTA. From Toronto to Georgina. See the map!
The prices seem higher than much of the store bought honey. Why?
This is true, but much of the honey that you buy in the store is either pasteurized or processed quickly to ensure it stays liquid. It can also be blended with other honeys or syrups and passed off at discount. The prices reflect the cost of operating a fair and honest business of providing great honey from across the province all while while including delivery to a local market.
Why don’t you ship for free to further areas outside of the delivery zone?
We’ll deliver for free within the zoned perimeter specified . Otherwise due to the weight and cost of packaging dense fragile jars, we don’t currently ship for free outside of the delivery zone.
Do you offer free shipping on larger orders?
No. Currently we do not offer free delivery outside of the zone perimeter. Though it’s possible that if a larger order was place outside of the delivery zone and it was convenient for us to deliver for unknown reasons at the time, we could possible do it. Just ask!
